Cut the beef as needed, then pour lime juice over the meat. Gently massage it and let it sit for 5 minutes so that the acidity of the lime can break down the protein fibers in the meat.
After the soaking process, rinse the meat with clean water to reduce the sour taste. Then, place the meat in a pot filled with water and boil for 5 minutes with the pot covered.
After 5 minutes, open the pot lid and clean off any bubbles or dirt that appear on the surface of the boiling water. This will help maintain the cleanliness of the broth and the flavor of the meat.
Sprinkle a little salt into the boiling water to help speed up the tenderizing process of the meat. Cover the pot again and continue boiling for another 5 minutes, then turn off the stove and let the meat sit in the covered pot for 5 minutes.
